Pineapple Cookie (鳯梨卷)

so happy that I can finally make them. Not difficult. Just very time consuming to make the pineapple jam.

Here is the ingredients:

  • 540 g (one can) crushed pineapple
  • 3 tablespoon of brown sugar
  • 3 tablespoon of honey

Cook above in low heat until dry and sticky.

The cookie is even easier

  • 100 g cake flour
  • 10 g icing sugar
  • 60 g butter (salted)
  • 1 egg yolk

Use creamy method to mix the ingredients. Pipe out the cookie dough strip.  Then roll jam around dough. Bake in 350F oven until golden brown (around 10 to 15 minutes)
