This is really simple recipe with rather low sugar. Turned out very crumbly and light and take very little time to prepare.
Here is the ingredients:
- 1/4 cup of sugar
- 1/2 cup of unsalted butter
- 1/2 cup of ground walnut (need to be very finely ground)
- a tiny pinch of salt
- 1 cup of all purpose flour
- 2 teaspoon of vanilla extract
- heavy pinch of freshly ground nutmeg
Cream sugar, butter & vanilla extract until light and fluffy. Mix the rest of the dry ingredients (be sure to sift out the big chunky piece of walnut for smoother texture). When butter mixture is light and fluffy, mix flour with creamed butter by hand to avoid over-mixing.
Roll the dough into log, label and freeze it!
Whenever you fancy fresh cookie, just take it out from freezer and preheat oven to 350F. As the oven is heating up, cut log into thin slices and bake for 8 minutes or until golden brown and smelling delicious.
