Spiced Biscotti


From American’s Test Kitchen 1000 pages cookbook “the new best recipe”


  • 2 1/4 cups (11 oz) AP flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 cup (7 oz) sugar
  • 2 large eggs (2 yolks)
  • 1/2 teaspoon vanilla extract


  1. Adjust an oven rack to the middle position and heat the oven to 350F.  Line a large baking sheet with parchment paper.  Whisk the flour, baking powder, baking soda, spices and salt together in medium bowl.
  2. Whisk the sugar egg and yolk in large bowl to light lemon colour, stir in vanilla extract, Sprinkle the dry ingredients over the egg mixture and fold in until the dough is just combined
  3. Halve the dough and turn each portion into the prepared baking sheet, Using floured hands and quickly stretch each portion of dough in a rough 13 by 2 inches loaf. Place loaves about 3 inches apart on the baking sheet, pat each one smooth.  Bake until loaves golden and just beginning to crack on te top (about 35 minutes)
  4. Cool the loaves for 10minutes; lower the oven to 325F, cut into 0.5 cm baking 15 minutes
