If you have bread machine, highly recommend you use it to make the dough. It is so simple and fast making Chinese steam bun dough.
Here are the list of ingredients steam bun:
- 600 g of all purpose flour
- 50 g of sugar
- 10 g of instant bread machine yeast
- 3 g salt
- 10 g shortening
- 150 g of milk
- 150 g of water
Put all the ingredients in the breadmaker. Select dough button and press start! Can’t find anything easier than this!!
When the dough is ready, divide the dough in half and cover the one half in slightly dampen cloth to be used later.
Evenly divide the half dough into 10 smaller dough and form little round dough ball. Cover the round dough ball in plastic warp and let them rest for 15 minutes. In the mean time, you can form lotus seed paste filling. Each filling ball is about 15g. I bought prepared lotus seed paste from store and I only use 150 g .
Roll the dough to be double the size filling. Seal the bun and put put sealed side down. Put on steamer and ready for 2nd prove. Only need 35 to 40 minute or until size doubled. Don’t over proof! Otherwise the surface will be winkled
Now you are ready to deal with remaining half of the dough. Roll to thin layer in rectangle shape. Add a thin layer of sesame oil, sprinkle thinly sliced green onions and a little roasted sesame. Roll up dough and cut into thin slices. Pick up three slices, then pull and twist to form the flower pattern
