Zucchini Muffin


With apple and raisin and (kind of ) whole-wheat flour.  I adopted recipe from Martha Stewart’s “Baking Handbook”   Unfortunately this turned out too sweet and too wet.

  • 1 1/4 cup of AP flour
  • 1/2 cup of wheat germ
  • 3/4 cup of sugar
  • 2 eggs
  • 1 cup granted zucchini
  • 1 small apple
  • 1/8 cup of dried raisin
  • 1 teaspoon of baking powder
  • a pitch of salt
  • 1/2 cup of canola oil (but I omitted this)

Mix the wet stuff together and fold in the dry ingredients (but not over mix).  Bake in 375F oven for 25 minutes
