Apple & Coconut Cake

Base on Yellow Cake  from Lake O’ Land with slight little twist
  • 3 oz butter
  • 2/3 cup of sugar
  • 1.5 cup of AP flour
  • 1/2 teaspoon of baking soda
  • 2 eggs
  • 1 pinch of salt
  • 1/2 cup of milk
  • 1/4 cup of unsweetened shredded coconut

Preheat oven 350F.  Mix AP flour, baking soda and salt in a small bowl and set aside.   Cream sugar and butter until fluffy.  Add egg one at a time.  Then add 1/3 of flour mixture, 1/4 cup of milk, then 1/3 of flour, the remaining milk, then flour and coconut.

Add sliced apple on top of batter.  This can yield one layer of 8″ round cake or two 5 * 3 * 2 inches of small size pound cake
