Classic European Sponge (from Flo Braker)

this butter less sponge cake recipe is quite simple. But it was a bit too brown on the side.  Probably will turn down the heat a bit in the future
Definitively worth learning and perfecting this recipe.  Here is the ingredients
  • 120 g of cake flour
  • 100 g of sugar + 2 tablespoons of sugar
  • 6 egg whites
  • 5 egg yolks
  • 1 teaspoon of vanilla
  1. shift flour for 3 time set aside
  2. whip yolks and sugar till ribbon stage, add vanilla toward the end  (high speed for 2 to 3 minutes)
  3. whip whites on a a very clean large bowl and gradually add 2 tablespoon of sugar while whipping.  whip until soft peak
  4. fold in 1/3 of white to yolk
  5. add 1/2 of flour to yolk mixture
  6. add in 1/2 of the remaining whites
  7. add in the rest of flour
  8. fold in all remaining white
  9. baking in 375 oven for 40 to 45 minutes
