Sponge —  Wisk to combine and store in chill chest for 8 hour or overnight
  • 10 oz water
  • 5oz  bread flour
  • 1/4  teaspoon of yeast
  • 2 teaspoon of honey

Dough

  • 3/4 teaspoon of yeast
  • 11 oz bread flour
  • your sponge
  • (last adding 2 teaspoon of salt)

It is quite amazing that we share the same slightly un-usual way to rise the dough in the oven
