almond pie dough (two 9 to 10 inches) — 350F  for 10 mins, then 325F (good base
  • 6 oz cold unsalted butter
  • 1 cup sugar
  • 1 1/4 cups cake flour
  • 1 cup AP flour
  • 1/2 almond flour (almond meal also OK)
  • 1 large egg
  • 1/8 teaspoon salt

cornmeal pie dough (two 9 to 10 inches) — 350F  (good for fruit tart with pastry cream)

  • 1/2 lb cold unsalted butter
  • 2 cups of pastry flour
  • 1 cup medium-grind yellow cornmeal
  • 1/3 cup sugar
  • 2 teaspoons finely chopped lemon zest
  • 4 large egg yolks
  • 1/2 heavy cream
  • 1 teaspoon salt
