The bread did not proof properly.. probably I put in too much wheat germ (I don’t buy whole wheat flour because I can’t use it fast enough before it becomes rancid)  So I create my own whole wheat flour by mixing plain all purpose with wheat germ.  Normally can turn out pretty good and you have complete control over the "wheaty" level…
